2 weeks ago, I went to visit a friend who surprised me with a ‘master culinary class’…She invited 3 other friends and we worked together in chopping vegetables, measuring spices, and rolling whole wheat dough. We chatted and enjoyed the beautiful and delicious salad, Monacan lentil stew, veggie-loaf, and bread afterwards. She shared her stories of changing diet to whole food plant-based (WFPB) and avoiding salt and oil. 4 years ago, she had high cholesterol, LDL, etc. and her doctor wanted to put her on medicines. She didn’t want that. She came across Dr.Gregger’s book ‘How not to die’ and started to learn more about WFPB. She decided to give it a try. In 8 weeks, she has significantly lowered cholesterol and LDL # and her doctor congratulated her that ‘the medicines worked quite well’. Well, the truth was that she never took them.
I was intrigued by her story. I wonder how it would be for me? I don’t eat much meat yet I love egg, seafood, and cheese. My lab results have been good yet it doesn’t hurt to eat more vegetables, fruits, and whole grains. So I decided to do a food experiment on myself. Starting today (5/6/24), I’ll switch to WFPB diet and avoid salt and oil. In 4 weeks (6/3/24 ), I’ll go do my blood work and see the result. Meanwhile, I’ll read Dr. Gregger’s book to learn more about the nutritional facts and reasoning and use Daily Dozen (fee app) to have a balanced diet/ variety of nutrients.
